Cipollini Onions – A New Fav

Rare? No, but a new find for me personally.

I have to say, I’ve never given onions a whole lot of thought. They’re ok, but nothing to write home about…..until now!

Last weekend at the farmers market I got some new potatoes and wanted to roast them with onions. The farmer suggested Cipollini onions, so fine, I bought some.

When I got home, I combined the onions with the new potatoes, and massaged them with olive oil, sea salt, pepper, and some fresh, chopped rosemary from the garden. I baked it for about an hour at 400 degrees.

What a surprise when I took a bite – the onions were the best part! The browner they got, they better they were.  Even slightly burnt in fact seemed to be the best.

The next night I roasted them with the green beans I bought at the market the day before. I put the onions (with olive oil, sea salt and pepper) in the oven for 30 minutes first so they would get nice and brown, then I added the green beans for another 20. And Voila – another great side!

For me, this is just another great reason why going to the Farmer’s Market is such a joy. Not only are you supporting your local economy, you’re getting an opportunity to talk to the farmers and get ideas that you may not otherwise think of.

Eating local can be a challenge, but it can also give rise to some of the best recipes you would otherwise miss out on.
