Passover Desserts-Chocolate Covered Matzo

I don’t know why I only make this for Passover because it is so delicious. Oh right, that’s actually why I only make it once a year; I have NO self control when it’s in the house.

It’s simple to make, and it’s the perfect finish to the Passover Seder.

It’s loaded with fat and sugar, so a little goes a long way, but it’s a delicious treat!

First, preheat the oven to 375. Next, melt 1/2 cup non-dairy butter in a pan.

Add 1 cup firmly packed brown sugar.

Melt the sugar, but not totally. Keep it thick.

 

Line a cookie sheet with parchment paper and assemble a single layer of matzo crackers.

Pour sugar/butter mixture over the matzo. Don’t worry about covering everything because it will spread out in the oven.

Turn the oven down to 350 and bake for 12 minutes. Immediately after taking the sheet out of the oven, top the crackers with mini, non-dairy, chocolate chips.

Wait a few minutes. When the chocolate chips begin to melt, use a spatula to spread out the chocolate evenly, covering the crackers completely.

Sprinkle chopped walnuts on top if you wish. I usually like to do some with and some without. Then refrigerate for 30 minutes.

That’s it – an easy, not-so-healthy, but delicious vegan Passover dessert! You can make them ahead of time and put them in the freezer. It’s also nice to save a stash in the freezer for post-Passover withdrawal.

1/4 cup non-dairy mini chocolate chips

1/2 cup crushed walnuts

    I use this recipe, with waverly crackers and pecans…. it’s a hit EVERYTIME… and I only do it at Christmas lol! :)
