Pasta With Sweet Dressing

As always, this is a quick, healthy meal that kids love! The sauce is creamy and sweet so it goes over well with even the picky eaters.

If kids, or adults, don’t love eating greens, covering them with a dressing will usually do the trick. As long as the dressing is healthy, why not?

Ingredients:

1 pound pasta of your choice

1 head brocoli

6 cups spinach

1 cup coconut creamer

2 cups cashews

1 tsp garlic powder

1 tsp onion powder

3/4 tsp salt

Directions:

Boil water and cook pasta according to directions on box.

Steam brocoli al dente.

In a vitamix, combine coconut creamer, cashews, garlic powder, onion powder, and salt.

When pasta is done, and still hot, strain, then transfer into a large bowl. While still hot, stir in the spinack so it wilts. Add the brocolli.
