Raw Coconut Chocolate Balls

I posted this recipe a few weeks ago, but recently shot a video with Noah and Henry for the EKC cable show demonstrating how easy these are to make. We are getting majorly geared up for Halloween over here, so we busted out the costumes! We are all going out as Transformers this year – as you can see…..

Try as I may, there does not seem to be a way to photograph these tasty treats that does them justice. At least not within my skill-set. But trust me, these are not to be missed!

They are healthy and they hit the spot when you’re looking for something sweet after a meal or as a little snack. We eat these almost everyday.

They are a great source of iron (2 tablespoons of cacao has 7% the daily recommended serving of iron, antioxidants, and immune building properties. In the video I say it has 45% the daily recommended serving, but sadly, that was just a typo on the package I’ve been using.

The recipe takes about 2 minutes to make so there’s no excuse not to give them a shot.

Yes, coconut has fat, but it’s good for you and it’s actually the kind of fat that helps you lose fat! A big diet mistake is avoiding fat. We need plenty of good fats in our diet. They are good for our brain, our skin, our immunity and more. If you don’t eat enough fats, you’ll end up eating empty calories somewhere else.

Ingredients:

1 1/2 cups organic shredded coconut

1 cup raw cacao powder

1/2  cup raw honey (you can use maple syrup or agave if you don’t eat honey)

1/4 cup coconut oil

1 teaspoon vanilla extract

Directions:

Combine shredded coconut and cacao, mix in the honey and oil, then the vanilla.

Form balls on a cookie sheet and refrigerate for 30 minutes.

    Thanks for the recipe. I tried it tonight with my two boys! They loved licking the spoons and bowl.

    It was a bit too sweet for us, so next time I will add less honey. This time I ended up using 1/2 cup honey and 1/2 maple syrup as I ran out of honey.

    Also I am going to try adding a little milled flax,sunflower, goji berries,pumpkin & sesame seeds to the mix just to add a bit more goodness. I will let you know how it works out.

    Can I make a big batch and freeze it? Also what would be helpful (I’m new to this type of lifestyle), how long something lasts like nad how to store it. For example, coconut oil. If I buy a bottle, will I just throw it away because it’s only good for one month in the fridge?

    Hi Jaque,

    We usually eat them all within 3 or 4 days, but they are good for up to a week. You can freeze them as well for a few months. Coconut oil can stay in your pantry for quite a while. Similar shelf life to any other oil (olive, veg. etc.)
