Replacement for Mashed Potatoes?

For me yes, but I wasn’t a die hard mashed potato girl to begin with.

Before you turn your nose up to the idea of mashed cauliflower replacing mashed potatoes, just try it once!

Last weekend I found an amazing head of Amish cauliflower at the farmer’s market, and it inspired me to make this favorite, old standby.

This is all you need to do…..

1) Wash and cut cauliflower, and steam for 10-15 minutes

2) Put 1 ladle of water from the pan, and the steamed cauliflower in the food processor with Galaxy Rice cheddar “cheese” (as much as you want – a cup or 2 works for me).

If you don’t have a food processor, you can mash with a fork or any appropriate ‘mashing’ utensil of your choice.

This makes a great side, or a main course for babies and small children. It works in the summer, and it’s a warm comfort food for the winter as well.

Cauliflower is high in Vitamin C and Folate. It also has similar properties to Kayle and broccoli that are thought to help prevent certain types of cancer.

Please let me know what you think after you try it. For me, it beats out mashed potatoes. What do you think?
