Roasted Sweet Potatoes With Apples

This is great for Thanksgiving, Easter, Christmas, but I’m making it for Passover. It can be tricky finding vegan dishes for holidays when your audience consists primarily of non-veggie guests, but this one is an easy crowd pleaser.

Simple, easy to make, healthy, and the cayenne with rosemary is unexpected and makes it feel a little more special that just mashed sweet potatoes.

The original recipe is from Gourmet Kosher Cooking, but I made a few tweaks. It’s an easy one to play with and make your own.

First, preheat the oven to 350. Peel sweet potatoes, dice into 1-inch pieces. Mix with olive oil, salt, cinnamon, cayenne and spread out on a baking sheet. Place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.

Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes.

Sprinkle the walnuts over the apples during the last 5 minutes in the oven.

When the sweet potatoes are mushy, you can mash them with a fork in the pan.

Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed. Serve immediately or keep in a warm oven and serve hot.
Ingredients:

2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1.5 Granny Smith apples
Juice of 1/2 lemon
1 sprig fresh rosemary, picked and finely chopped
1/2 cup coarsely chopped walnuts

Directions:

In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
