Spinach Salad with Peanut/Miso Dressing!

Trust me, your kids will eat spinach salad, but it’s all about the dressing!

This peanut miso dressing is sweet and easy for little ones to eat. This is actually one of Henry’s favorite meals.

Another way to get them to eat their veggies is to grow them in your own garden.

The kids are so exited to watch their spinach and broccoli grow and they run into the house to make a salad, or cook the broccoli after we pick them.

The actual salad is pretty basic, and obviously you can add or subtract whatever you like.

We usually do spinach, with red and yellow bell peppers (chopped), cherry tomatoes and some avocado slices. Our cherry tomatoes aren’t in yet, and we don’t grow avocados, but picking the spinach does make this salad a lot of fun.

The dressing is from Vegan Yum Yum and takes about 3 minutes to make. I usually double the recipe and save it so we can use it for a few days.

ingredients:

1 Tablespoon White Miso

1 Tablespoon Dijon Mustard

1 Tablespoon Sugar

1 Teaspoon Balsamic Vinegar (optional)

2 Pinches Salt

Pepper to Taste

3-4 Tablespoons Peanut Oil

Directions:

Combine all the ingredients (minus the peanut oil)

After they are well mixed, add the peanut oil a tablespoon at a time.

Whisk it all together and add a little hot water if it’s too thick.
