Vegan Reuben Sandwich Recipe

A few weeks ago I was having lunch at one of my favorite vegetarian restaurants in Ann Arbor, Seva, and I had an amazing vegan Reuben sandwich.
The next day I decided to try my own version and it did not disappoint.

If you’re craving greasy garbage food, that is actually good for you, this is perfect.

Ingredients:

1 tablespoon refined coconut oil

1 tablespoon sugar

1 Link of  Field Roast smoked apple sage sausage

2 slices bread of your choice (maybe sour dough or rye)

Non-Dairy Butter (Earth Balance)

Sauerkraut (I make the whole jar and snack on what I don’t use because I love it)

2 tablespoons vegenaise (vegan mayo)

2 teaspoons ketchup

Directions:

If you have a panini maker, start it now.

Melt refined coconut oil in a sauce pan, and add the cut, or crumbled, sausage. Brown on both sides – only about 2 or 3 minutes per side.

Remove sausage, and add sauerkraut to the pan with 1 tablespoon of sugar, toss to coat with oil, and warm.

Make “Russian Dressing” by combining the vegenaise and ketchup.

Lightly butter one side of each slices of bread.

Spread Russian Dressing on non-buttered side.

Put sauerkraut and sausage on top, close the sandwich and either cook in your panini maker, or brown both sides in the same pan you used to cook the sausage and sauerkraut.
