Mother’s Day

A few days before Mother’s Day we decided to have everyone over to our house – yikes!

First of all it wasn’t much notice, secondly, I’ve never cooked a holiday dinner by myself before, let alone a vegan one.

But I offered, and I was actually a little excited to figure it all out. Of course I had Noah and Henry to help and make it all fun.

Friday night I made the pizza dough and asked my husband to put it in the refrigerator for me before he went to bed because it needed to be at room temp for 2 hours and I was tired.

So, 6:30 a.m. rolls around and I go into the kitchen to find the dough still on the counter with a pretty strong fermented smell. Four of them mind you.

Clearly things were getting off to a rocky start!

After the kids went to bed Saturday night, I re-made all 4 doughs, made hummus, sweet potato stew, and bread dough. Obviously I stayed awake until the dough was ready to go into the refrigerator :)

Sunday the kids and I made pumpkin pie and cookies. As I was trying to place the pie on the cooling rack I dropped it in a drawer! I’m pretty sure I saw Noah’s chin hit the floor and then we had a good laugh.

Luckily I made two pies!

About 30 minutes before the guests arrived I prepared the four pizzas, warmed up the stew, put out the fruits and veggies and we were ready to go!

I did buy vegan cupcakes and quac because the cupcakes are too time consuming. The kids love to make them, but we just ran out of time. Guacamole is easy to make, but I think whole Foods does a great job so I got it from there.

I got a lot of positive feedback from the crowd and I think it was a hit – either that, or I just have a really polite family – not sure.

It was a lot of fun, and a great opportunity to show the fam that you can have a delicious, satisfying meal without meat or dairy!

It was also cool to use my website for all my recipes – I didn’t have to look anywhere else! I hyperlinked the recipes in this post for you to check out.

    You always had a great sense of humor. . .even as a little girl. . .it really helps get thru life, right!! You seem to have so much fun with the boys. . .your Mom had a lot of fun with you as I recall. Please give my regard to your folks. . .I miss all of you. . .hugs & love, Sharon
